  • 1 large spaghetti squash
  • 1 lb ground beef or Italian sausage
  • 1 cup marinara sauce (sugar-free for keto)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • Salt & black pepper to taste
  • 1 cup ricotta or cottage cheese
  • ½ cup cream cheese softened
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil and season with salt and pepper.
  2. Place the squash cut-side down on a baking sheet and roast for 40 minutes or until tender.
  3. While the squash is roasting, heat a skillet over medium heat and cook the ground beef or Italian sausage until browned. Drain excess fat.
  4. Add marinara sauce, garlic powder, onion powder, Italian seasoning, salt, and black pepper to the meat. Simmer for 5 minutes.
  5. In a bowl, mix ricotta or cottage cheese, cream cheese, and half of the mozzarella cheese.
  6. When the squash is cool enough to handle, use a fork to scrape out the flesh into strands and place in a large mixing bowl.
  7. Add the meat sauce and cheese mixture to the squash strands and stir to combine.
  8. Transfer the mixture to a baking dish and top with remaining mozzarella and Parmesan cheese.
  9. Bake at 375°F (190°C) for 10 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh basil or parsley before serving.
