  • 1 cup red lentils, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  2. Add garlic and spices, cook for another minute until fragrant.
  3. Add lentils, diced tomatoes, and broth. Bring to a boil, then reduce heat and simmer for 25 minutes.
  4. Season with salt and pepper. Garnish with fresh parsley.
