Ingredients

  • 4 oz grilled salmon fillet
  • 2 cups mixed greens
  • 1 ripe avocado, sliced
  • 1/2 cucumber, sliced
  • 1/4 cup cherry tomatoes
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Season salmon with salt and pepper. Grill for 4-5 minutes per side until cooked through.
  2. Whisk together olive oil, lime juice, honey, and Dijon mustard for dressing.
  3. Arrange greens on a plate, top with avocado, cucumber, and tomatoes.
  4. Flake salmon over salad and sprinkle with pumpkin seeds.
  5. Drizzle with dressing and serve immediately.

Notes

  • You can prep the salmon ahead of time and serve it cold over the salad—equally delicious!
