Ingredients

- 4 oz grilled salmon fillet
- 2 cups mixed greens
- 1 ripe avocado, sliced
- 1/2 cucumber, sliced
- 1/4 cup cherry tomatoes
- 2 tablespoons pumpkin seeds
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Season salmon with salt and pepper. Grill for 4-5 minutes per side until cooked through.
- Whisk together olive oil, lime juice, honey, and Dijon mustard for dressing.
- Arrange greens on a plate, top with avocado, cucumber, and tomatoes.
- Flake salmon over salad and sprinkle with pumpkin seeds.
- Drizzle with dressing and serve immediately.
