A refreshing and easy no-bake dessert combining layers of fresh summer berries, creamy mascarpone mixture, and graham crackers for a delightful treat perfect for warm days.

Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 2 cups fresh blueberries
  • 2 cups fresh raspberries
  • 2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1215 graham crackers or ladyfingers
  • Zest of 1 lemon (optional)

Instructions

  1. In a mixing bowl, whip the heavy cream until stiff peaks form.
  2. In another bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Gently fold the whipped cream into the mascarpone mixture.
  3. Line the bottom of a serving dish with graham crackers or ladyfingers.
  4. Spread a layer of the mascarpone mixture over the crackers.
  5. Add a layer of mixed berries and sprinkle lemon zest if desired.
  6. Repeat layers until ingredients are used, finishing with berries on top.
  7. Refrigerate for at least 4 hours or overnight before serving.

Notes

  • For best results use fresh ripe berries and chill the dessert overnight to enhance flavors and texture
