  • 2 pounds beef stew meat cubed chuck roast
  • 4 tablespoons cornstarch divided
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 1 1/2 pounds red potatoes cut into bite-sized chunks
  • 10 ounces pearl onions
  • 4 medium carrots sliced
  • 4 medium celery ribs sliced
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground allspice
  • 1/4 cup cold water

Instructions

  1. Coat the beef with cornstarch and season it well with salt and black pepper.
  2. Heat olive oil in a large pot over medium-high heat, then brown the beef on all sides for about five minutes, stirring often.
  3. Add minced garlic and tomato paste, then cook for a minute or two until you can smell the aromas.
  4. Pour in beef broth and Worcestershire sauce, scraping the pot to lift the browned bits, then add potatoes, pearl onions, carrots, celery, sugar, and all the dried spices. Stir everything together well.
  5. Bring the stew to a boil, then lower the heat, cover, and let it simmer for 90 to 120 minutes, stirring here and there until the beef is tender.
  6. Mix the remaining cornstarch with cold water until smooth, pour it into the stew slowly while stirring, and cook for a few more minutes until the gravy thickens.
  7. Taste and adjust seasoning if needed, then serve the stew hot.
