Ingredients

1 tablespoon olive oil
1 medium onion diced
2 cloves garlic minced
2 medium carrots diced
2 stalks celery diced
1 teaspoon dried thyme
1 teaspoon dried basil
6 cups chicken broth
2 cups cooked chicken shredded
1 package 16 oz gnocchi
2 cups fresh spinach
1 cup heavy cream
salt to taste
black pepper to taste
grated Parmesan cheese for serving optional
Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion, garlic, carrots, and celery; sauté until vegetables are tender.
Stir in dried thyme and basil.
Pour in chicken broth and bring to a boil.
Add shredded cooked chicken and gnocchi, cook until gnocchi floats to the surface.
Reduce heat to low and stir in fresh spinach and heavy cream.
Season with salt and black pepper to taste.
Serve hot with grated Parmesan cheese if desired.
Notes
For a thicker soup, add a slurry of cornstarch and water before adding cream
