  • 4 (8-ounce) bone-in skin-on chicken thighs patted dry
  • ¾ teaspoon black pepper
  • 1 ½ teaspoons kosher salt divided
  • 1 (10-ounce) bunch fresh broccolini trimmed
  • 1 tablespoon olive oil
  • 2 shallots finely chopped about ½ cup
  • 3 garlic cloves finely chopped about 1 tablespoon
  • 1 cup uncooked orzo
  • 2 cups chicken broth
  • 1 (5.3-ounce) package garlic-and-herb spreadable cheese such as Boursin
  • 2 tablespoons chopped fresh thyme leaves plus more for garnish
  • ½ teaspoon grated lemon zest

Instructions

  1. Heat a large cast-iron skillet over medium and season chicken thighs with pepper and a teaspoon of salt. Place chicken skin side down and cook until the skin is crispy and fat is rendered, about 10 to 15 minutes. Turn the chicken over and cook for an additional 2 minutes until browned but still not fully cooked. Remove the chicken to a plate, keeping the drippings in the skillet.
  2. Toss broccolini in olive oil and a quarter teaspoon of salt, then spread evenly on a baking sheet and bake at 425°F for 12 minutes until tender and slightly charred. Lower the oven temperature to 350°F and chop the broccolini into ¾ inch pieces.
  3. Add the shallots and garlic to the skillet drippings and cook over medium heat, stirring constantly for about a minute until fragrant. Stir in the orzo and cook, stirring continuously, until it begins to brown, roughly one minute. Pour in the chicken broth and the remaining salt quarter teaspoon and bring to a simmer over medium heat.
  4. Remove the skillet from heat and nestle the chicken back into the orzo along with any juices. Place the skillet in the oven and bake uncovered at 350°F for 12 to 15 minutes until the orzo is tender and the chicken reaches an internal temperature of 170°F.
  5. Take the skillet out of the oven and transfer the chicken to a plate to rest. Stir the Boursin cheese, thyme, lemon zest, and broccolini into the orzo until creamy and well combined. Garnish with additional thyme leaves before serving with the chicken.

  • For crisp tops, broil 2–3 minutes at the end
