  • 1 (24.5 oz) jar marinara sauce
  • 24 oz chicken broth or water
  • 1 teaspoon Italian seasoning
  • 16 oz penne pasta
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese

Instructions

  1. Warm the olive oil in a large heavy pot and cook the diced onion until it softens, about four minutes.
  2. Add the minced garlic and sauté for an additional 30 seconds until fragrant.
  3. Stir in the marinara sauce, chicken broth, and Italian seasoning, then bring the mixture to a rolling boil.
  4. Add the penne pasta, stir well, then lower the heat to a gentle simmer, stirring often to avoid sticking.
  5. Continue to simmer for 20 minutes or until the pasta is tender and the sauce has thickened to half its original volume.
