2 cups elbow macaroni or pasta of your choice
4 cups vegetable broth or water
1 cup mixed vegetables e.g. broccoli or bell peppers or spinach
2 cups shredded cheese cheddar or vegan cheese
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper to taste
Optional spices paprika or Italian seasoning
Instructions
Heat olive oil in a large pot over medium heat and sauté mixed vegetables for 3-4 minutes until softened.
Add elbow macaroni and pour in vegetable broth or water, bring to a boil.
Reduce heat to simmer, cover pot, and cook for 8-10 minutes stirring occasionally until pasta is al dente and most liquid is absorbed.
Remove pot from heat and stir in shredded cheese until melted and creamy.
Season with salt, pepper, and optional spices to taste, mix well.
