Ingredients

  • 1 lb Pasta (I recommend bowtie or orzo)
  • ½ cup Olive Oil
  • 2 pints Cherry Tomatoes (around 2025 oz)
  • 1 8 oz block Feta Cheese
  • 4 cloves Garlic finely chopped
  • 2 pinches Red Pepper Flakes
  • 1 handful Fresh Basil Leaves
  • Kosher Salt and Fresh Cracked Pepper
  • Balsamic Glaze (if the tomatoes are too sour)

Instructions

  1. Heat your oven to 400 degrees and combine cherry tomatoes, olive oil, and salt in a baking dish.
  2. Place the feta block in the center, drizzle with extra olive oil, and sprinkle red pepper flakes over it before baking for 30 minutes.
  3. While baking, cook the bowtie pasta until just tender then drain, keeping some pasta water aside.
  4. Increase oven temperature to 450 degrees and continue baking for another 5 to 10 minutes until the feta and tomatoes develop a golden brown color.
  5. Remove from oven, quickly stir in the chopped garlic and fresh basil to soften the garlic flavor.
  6. Toss the pasta with the tomato and feta mixture, season with salt and pepper, and add reserved pasta water if needed to loosen the sauce.

Notes

  • If possible, use a small baking dish so the tomatoes touch each other
  • Add ½ cup pasta water if the sauce seems dry after cooking
