Ingredients

  • 8 lasagna noodles
  • 2 cups cooked chicken shredded
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 1 egg
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • Fresh parsley chopped for garnish

Instructions

  1. Heat your oven to 375°F 190°C.
  2. Boil the lasagna noodles following the package guidelines until they are firm. Drain and lay them flat to avoid sticking.
  3. Mix shredded chicken with ricotta cheese, half the Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and pepper in a large bowl.
  4. Coat each noodle with the chicken filling and roll them tightly.
  5. Spread marinara sauce over the base of a 9×13 inch baking dish.
  6. Arrange the roll-ups seam side down in the dish and pour the remaining marinara sauce on top.
  7. Sprinkle mozzarella and remaining Parmesan evenly.
  8. Cover the dish with foil and bake for 20 minutes.
  9. Remove the foil and continue baking for 10 more minutes until cheese melts and browns.
  10. Garnish with parsley before serving.

Notes

  • For crisp tops, broil 2–3 minutes at the end
