  • 8 tbsp chia seeds
  • 2½ cups coconut milk
  • 2 tbsp maple syrup
  • 1 cup shredded coconut
  • ½ cup vegan Greek yogurt
  • 1 cup fresh pineapple very finely chopped
  • extra chopped fresh pineapple and pineapple leaves for garnish

Instructions

  1. In a large bowl, mix chia seeds, shredded coconut, maple syrup, and coconut milk thoroughly.
  2. Allow the mixture to sit for 2 minutes, then whisk again to break up any lumps.
  3. Transfer the mixture into airtight containers and refrigerate for at least 2 hours or overnight.
