  • 1 pound ground beef
  • 1 cup pepperoni slices
  • 2 cups cauliflower rice
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat the oven to 350°F 175°C.
  2. Cook the ground beef in a skillet over medium heat until browned.
  3. Remove excess fat then introduce marinara sauce, Italian seasoning, salt, and pepper, stirring together.
  4. Mix in cauliflower rice and half of the mozzarella cheese.
  5. Pour the mixture into a baking dish and cover with the remaining mozzarella and pepperoni slices.
  6. Bake for 25 to 30 minutes until the cheese melts and turns golden.
  7. Allow the casserole to rest for a few minutes before serving.
