A creamy and comforting casserole featuring tender chicken breasts, sour cream, and a crunchy cracker topping with optional poppy seeds and rice for a hearty family meal.

Ingredients

  • 5 cups chicken breasts
  • cooked and cubed (or shredded)
  • 1 cup sour cream
  • 2 (10.75 ounce cans) condensed cream of chicken soup
  • 2 cups crushed Ritz crackers (about 1 1/2 rolls of crackers)
  • 1/2 cup butter
  • melted
  • 1 Tablespoon poppy seeds (optional)
  • optional 2 cups cooked rice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine cooked chicken, sour cream, and condensed cream of chicken soup. Stir in cooked rice if using.
  3. Transfer the mixture to a greased baking dish.
  4. In a small bowl, mix crushed crackers, melted butter, and poppy seeds if using.
  5. Sprinkle cracker mixture evenly over the chicken mixture.
  6. Bake uncovered for 15 minutes or until the topping is golden brown and casserole is heated through.

Notes

  • For extra flavor, add a pinch of black pepper or chopped onions
  • Rice is optional but adds heartiness
