1 medium pumpkin (3 –4 pounds) peeled and cubed
1 medium onion finely chopped
2 cloves garlic minced
1 medium carrot diced small
1 stalk celery diced
4 cups vegetable broth
1 cup full-fat coconut milk
Peel and cube the pumpkin.
Finely chop the onion and mince the garlic.
Dice the carrot and celery.
In a large pot, sauté the onion and garlic until fragrant.
Add the carrot, celery, and pumpkin cubes and cook for a few minutes.
Pour in the vegetable broth and bring to a boil.
Reduce heat and simmer until the pumpkin is tender, about 20 minutes.
Use an immersion blender to puree the soup until smooth.
Stir in the coconut milk and heat through.
Serve warm.
