  • 2 cups 240g all-purpose flour be sure to measure properly
  • ¼ cup 24g unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup 113g unsalted butter softened to room temperature
  • 1 cup 200g granulated sugar
  • 1 large egg at room temperature
  • 2 teaspoons vanilla extract
  • 1 Tablespoon 15mL red food coloring1
  • 4 ounces 113g full fat block cream cheese softened to room temperature
  • ¼ cup 57g unsalted butter softened to room temperature
  • 1 and ¾ cup 210g powdered sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Preheat the oven to 350ºF 177ºC and line a large baking sheet with parchment paper or a silicone baking mat.
  2. Whisk together flour, baking soda, salt, and cocoa powder in a medium bowl.
  3. Cream butter and granulated sugar until light and fluffy using a mixer, then add egg and beat again.
  4. Add vanilla and red food coloring and beat on medium speed, scraping sides to combine evenly.
  5. Add flour mixture slowly on low speed until dough forms and is crumbly, then use hands to bring dough together.
  6. Scoop dough into balls, roll smooth, flatten slightly, and bake on prepared sheet for 10-11 minutes until puffed and edges are set.
  7. Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely before frosting.
  8. Prepare cream cheese frosting by mixing cream cheese and butter until smooth, then add powdered sugar, vanilla extract, and pinch of salt.
  9. Frost cooled cookies as desired.

Notes

  • For crisp tops, broil 2–3 minutes at the end
