Ingredients

  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes washed and cut into quarters
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper

Instructions

  1. Prepare the garlic by slicing off the top quarter inch and wrapping it in foil after drizzling olive oil on it, then roast at 375 degrees F for about one hour until soft and golden.
  2. In a large pot, cover the quartered potatoes with cold water, add one teaspoon of salt, and boil until tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot with the roasted garlic cloves.
  4. Warm the half and half with the butter until the butter melts, then add this mixture along with salt and pepper to the potatoes.
  5. Mash everything together until creamy but still a bit lumpy, then garnish with fresh herbs and extra butter before serving.

Notes

  • For crisp tops, broil 2–3 minutes at the end
