This hearty and comforting Hearty Sausage Soup combines tender potatoes and healthy kale for a delicious Potato and Kale Soup. Perfect as an Easy Sausage Soup or a one pot Sausage and Vegetable Soup, it’s a savory meal for any occasion.

Ingredients

  • 1 pound 450 grams Italian sausage mild or spicy depending on preference
  • 1 tablespoon olive oil
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 4 cups about 1 liter chicken broth
  • 34 medium potatoes peeled and diced
  • 4 cups kale washed and chopped stems removed
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes for added heat
  • 1/2 teaspoon dried thyme or Italian seasoning
  • Grated Parmesan cheese for serving
  • Crusty bread for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until browned, breaking into small pieces. Drain excess fat leaving about a tablespoon.
  3. Add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook 1 more minute.
  4. Stir in red pepper flakes and dried thyme or Italian seasoning if using.
  5. Pour in chicken broth and scrape browned bits from the pot.
  6. Add diced potatoes, bring to boil, then reduce to simmer until potatoes are tender about 15-20 minutes.
  7. Stir in chopped kale and cook until wilted about 5 minutes.
  8. Slowly add heavy cream or half-and-half and heat through without boiling.
  9. Season with salt and pepper to taste.
  10. Serve hot, sprinkled with grated Parmesan and crusty bread if desired.
