Sheet Pan Chicken Fajitas provide a quick and easy meal option perfect for weeknights. This recipe features juicy chicken with zesty fajita seasoning and colorful veggies cooked all on one pan for easy cleanup. It’s a flavorful and effortless dinner choice for any occasion.

Ingredients

  • 1 Tbsp chili powder
  • 1/2 Tbsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 1/8 tsp cayenne pepper
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 small yellow onions or one large
  • 3 bell peppers any color
  • 1 lb chicken breast
  • 2 Tbsp cooking oil
  • 1 lime
  • 8 6-inch tortillas
  • 1/2 cup sour cream optional
  • 1/4 bunch cilantro optional

Instructions

  1. Heat the oven to 400°F and combine all spices to create your fajita seasoning mix.
  2. Slice the onions and bell peppers into strips approximately 1/4 inch wide and cut the chicken breast into similar thin strips.
  3. Arrange the chicken and vegetables on a large baking sheet and drizzle with cooking oil. Sprinkle the seasoning evenly and toss everything together so all pieces are coated.
  4. Spread the mixture evenly on the pan and bake for 35 to 40 minutes, stirring once halfway through baking.
  5. After removing from the oven, squeeze juice from half a lime over the cooked ingredients.
  6. Serve the chicken and veggies inside tortillas with optional cilantro, sour cream, and an extra lime wedge if you like.

  • For crisp tops, broil 2–3 minutes at the end
