1 cup uncooked Sushi Rice or any short grain rice (measurement using rice cooker measuring cup about 1/2 cup using baking measuring cup)
1 cup Water
2 teaspoon Rice Vinegar
1/4 teaspoon Salt
1/4 teaspoon Sugar
1/2 teaspoon Black Sesame Seed
1 1/2 tablespoon toasted White Sesame Seed
1 piece Nori
4 pieces Shrimp Tempura
Cucumber Sticks or Avocado
Sriracha Mayonnaise (1/4 cup Mayonnaise
1 teaspoon Lemon Juice
1/4 teaspoon Salt
1 teaspoon granulated Sugar
1 teaspoon Sriracha Sauce more or less depending on how spicy you like it)
Instructions
Cook the sushi rice according to package instructions using 1 cup water.
Mix rice vinegar sugar and salt then fold into cooked rice.
Prepare sriracha mayonnaise by combining mayonnaise lemon juice salt sugar and sriracha sauce.
Lay nori on bamboo sushi mat then evenly spread rice over nori leaving 1 inch at top.
Sprinkle black and white sesame seeds over rice.
Place shrimp tempura cucumber or avocado sticks horizontally on rice.
Drizzle sriracha mayonnaise over shrimp tempura.
Roll the sushi tightly using bamboo mat then seal edge with a bit of water.
Slice roll into 6 to 8 pieces and serve immediately.
Notes
For best results use fresh shrimp and prepare all ingredients before spreading rice on nori
