  • 1 tbspextra virgin olive oil
  • kosher salt and black pepper
  • ½1 lbboneless chicken breasts cut into cubes
  • 1yellow onion chopped
  • 2 tbspsalted butter
  • 2 tbspfresh thyme leaves
  • ½ tspgarlic powder
  • ½ tsppaprika
  • ¼ tspcayenne pepper or to taste
  • 1 ½ cupbasmati rice
  • ½ cupdry broken spaghetti or orzo
  • 3 cuplow sodium chicken broth
  • 3 cupbroccoli florets roughly chopped
  • ¾ cupwhole milk or milk of choice
  • 1 cupshredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat, then cook chicken and onion until they release aroma, about 5 minutes, seasoning with salt and pepper.
  2. Stir in butter, thyme, garlic powder, paprika, and cayenne, then add rice and pasta, cooking for 2-3 minutes until they turn golden and toasted.
  3. Pour in chicken broth and bring to a high boil. Add broccoli along with salt and pepper, then cover and reduce heat to low. Cook for 20-25 minutes until the rice is nearly done.
  4. After the rice finishes cooking, mix in milk and cheddar cheese, then remove the pot from heat and stir until smooth and creamy. Serve warm topped with extra thyme and pepper if desired.
