This sour cream beef noodle casserole is a creamy beef noodle bake perfect for weeknight dinners. It layers seasoned ground beef with tender egg noodles and a rich sour cream mixture for a comforting ground beef noodle casserole everyone will enjoy.

Ingredients

  • 1 lb lean ground beef
  • 1/2 yellow onion chopped
  • 2 cloves garlic minced
  • 2 15 oz cans tomato sauce
  • 1 teaspoon Italian seasoning
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup cheddar cheese grated
  • Kosher salt and freshly ground black pepper to taste

Instructions

  1. Heat your oven to 350°F and coat a 9×13 inch baking pan with nonstick spray.
  2. Brown the ground beef and onion in a large skillet over medium-high until fully cooked, about 10 minutes. Add garlic and cook for 1 more minute.
  3. Mix in tomato sauce and Italian seasoning then simmer for 5 minutes, stirring occasionally and seasoning with salt and pepper. Remove from heat.
  4. Meanwhile, boil egg noodles in salted water until tender according to package directions. Drain well.
  5. Combine sour cream and cottage cheese in a bowl then stir in the cooked noodles, seasoning with salt and pepper.
  6. Layer half the noodle mixture in the baking dish, then cover with half the meat sauce. Repeat these layers.
  7. Sprinkle the grated cheddar cheese evenly on top and bake for about 30 minutes until bubbly and melted.
  8. Allow the casserole to rest for 10 minutes before serving.

Notes

  • For crisp tops, broil 2–3 minutes at the end
