Sourdough Cheesy Breadsticks

Breadstick flavor variations: garlic, jalapeño, and everything bagel

These cheesy sourdough breadsticks are golden on the outside, soft and fluffy inside, with a tangy sourdough base and an irresistible cheesy top.

For the Dough:

  • 1 cup sourdough starter (active or discard)
  • 1½ cups all-purpose flour
  • ½ cup warm water
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp garlic powder (optional)

For the Topping:

  • 1 cup shredded mozzarella
  • ¼ cup grated parmesan
  • 1 tbsp melted butter
  • Optional: herbs, chili flakes, or bagel seasoning

Instructions

  1. In a large bowl, mix sourdough starter, warm water, olive oil, sugar, and garlic powder.
  2. Stir in flour and salt. Knead 5–7 mins by hand (or 3 mins in mixer) until smooth.
  3. Cover and let rise 4–6 hours (or overnight in fridge) until doubled.
  4. Roll dough into a 9×13” rectangle. Cut into breadstick strips.
  5. Place on parchment-lined sheet, brush with melted butter, top with cheese.
  6. Optional: Let rest 20–30 minutes for extra fluff.
  7. Bake at 425°F (220°C) for 15–18 mins until golden and bubbling.
  8. Cool slightly and serve warm!
