⅓ cup (65 grams ) sourdough starter discard or fed 12-24 hours prior
1⅓ cups (300 grams ) warm water filtered 95º to 100º F
¼ cup (56 grams ) granulated sugar
3½ –4 cups (500 grams ) bread flour or all-purpose flour
1½ tablespoons (20 grams ) extra-virgin olive oil
2 teaspoons (9 grams ) salt
Mix sourdough starter and warm water until combined.
Add sugar and stir.
Gradually add flour and olive oil, mix until dough forms.
Knead dough for 10 minutes until smooth.
Cover and let rise for 4-6 hours until doubled in size.
Shape dough into a loaf and place in greased pan.
Let rise again for 1-2 hours.
Preheat oven to 375ºF (190ºC) and bake loaf for 30-35 minutes until golden brown.
Cool before slicing.
Notes
Use a kitchen scale for best flour measurement accuracy
Adjust water slightly if dough feels too dry or sticky
Allow full fermentation time for best flavor and texture
