Easy Sourdough Sandwich Bread

This soft and fluffy sourdough sandwich bread is easy to make and absolutely delicious! This is a quick + simple sourdough bread that requires no kneading or stretch and folds.

Ingredients

Scale
  • 65 grams active sourdough starter active + bubbly
  • 300 grams lukewarm water
  • 12 grams salt 2 teaspoons
  • 14 grams sugar
  • 15 grams oil (avocado or olive) 1 tablespoon, plus more for coating the pan
  • 400 grams bread flour
  • 100 grams all purpose flour

Instructions

Step 1: Mix the Dough

  • Mix water + sourdough starter first
  • Add all dry ingredients (flours, salt, sugar)
  • Add oil last
  • Mix until no dry flour remains
  • Cover and rest for 1 hour

Step 2: First Rise

  • Shape dough into a ball
  • Cover and let rise until DOUBLE in size
  • Takes 8-10 hours (go by size, not time)
  • Temperature affects timing

Step 3: Shape the Dough

  • Put dough on floured surface
  • Gently press out air bubbles
  • Fold all 4 sides into center
  • Roll into rectangle shape
  • Rest 10 minutes

Step 4: Final Shaping

  • Oil your 9×5 bread pan
  • Tighten dough sides
  • Place in pan and cover
  • Use plastic bag, wrap, or damp towel

Step 5: Second Rise

  • Let rise until dough is ½ inch ABOVE pan rim
  • Takes 2-4 hours
  • Again, temperature affects timing

Step 6: Bake

 

  • Preheat oven to 400°F
  • Bake uncovered for 40 minutes
  • Look for golden brown top
  • Cool in pan 5 minutes
  • Transfer to cooling rack
