Ingredients

  • 4 large organic sweet potatoes peeled + cubed
  • 23 Tbsps extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup Almond milk You can use whole milk or your fave plant-based milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter cubed into small pieces
  • ⅓ cup organic brown sugar
  • ¼ cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins soaked + drained See Notes!
  • 2 cups marshmallows
  • 1 ½ cups raw pecans
  • ¼ cup pure maple syrup

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil ground cinnamon and nutmeg until fully coated.
  3. Arrange sweet potatoes on baking sheet in single layer and bake 50-60 minutes until tender charred and golden.
  4. Remove sweet potatoes and let cool slightly.
  5. Preheat oven to 375 degrees Fahrenheit and grease a 9×13 baking dish.
  6. Combine roasted sweet potatoes milk vanilla brown sugar maple syrup cinnamon nutmeg allspice raisins and marshmallows mixing until combined.
  7. Spread mixture in baking dish and tuck pieces of butter and extra marshmallows throughout.
  8. Mix pecans with maple syrup and spread topping over casserole.
  9. Cover with foil and bake 15 minutes then remove foil and bake 15 more minutes until top is golden brown and marshmallows melted.
  10. Cool slightly before serving.

Notes

  • For crisp tops, broil 2–3 minutes at the end
