  • Strawberries
  • 1 lb Strawberries halled and sliced
  • 1 teaspoon Balsamic Vinegar
  • 2 teaspoons sugar
  • 8 oz strong espresso
  • 1 teaspoon vanilla
  • 1 teaspoon rum flavoring
  • ½ cup sugar
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • 4 Tort Wafers
  • 1 lb Strawberries hulled
  • ¼ cup rose preserves
  • 1 cup mascarpone
  • ½ cup Nutella
  • 2 tablespoons cocoa

Instructions

  1. Quarter half of the strawberries and combine them with balsamic vinegar and sugar in a bowl, then refrigerate.
  2. Brew strong espresso using a moka pot, then mix it with sugar, vanilla, and rum flavoring; cool to room temperature.
  3. Blend mascarpone with half of the espresso mixture using a stand mixer.
  4. Place one wafer on a plate and spread Nutella to the edges.
  5. Top with a second wafer and press firmly.
  6. Spread rose preserves evenly over the wafer and place another wafer on top pressing down firmly.
  7. Spread the mascarpone mixture on that wafer, then arrange the marinated strawberries in a circular pattern over it.
  8. Add another wafer on top gently to avoid squishing the strawberries and spread the remaining espresso mixture over it.
  9. Refrigerate the cake for at least four hours to set.
  10. Whip the heavy cream with sugar just before serving.
  11. Use a piping bag with a star nozzle to pipe whipped cream around the cake edges, add whole strawberries in the center, and pipe more whipped cream decoratively.
  12. Dust the top with cocoa powder and serve.

Notes

  • For crisp tops, broil 2–3 minutes at the end
