These easy no-bake strawberry shortcake bars combine fresh strawberries with a buttery shortcake base topped with whipped cream for a delicious summer treat everyone will love.

1 cup unsalted butter softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
2 cups chopped fresh strawberries
1 tbsp granulated sugar
1 tbsp cornstarch
whipped cream
white chocolate drizzle
Preheat oven to 350°F.
In a bowl, cream butter and sugar until fluffy.
Add eggs and vanilla, beat well.
Combine flour, baking powder, and salt; add to wet ingredients, mix.
Press dough into a greased pan and bake for 20 minutes.
In a separate bowl, toss strawberries with sugar and cornstarch.
Spread strawberry mixture over baked shortcake base.
Refrigerate until set.
Top with whipped cream and white chocolate drizzle before serving.
Notes
For best results, use fresh ripe strawberries and chill the bars overnight to set completely
