Delight in these sweet and fruity strawberry shortcake cookies, perfect for any occasion. Soft, buttery, and bursting with fresh strawberries and white chocolate chips.

Ingredients

  • 2½ cups all-purpose baking mix
  • 1/2 cup granulated sugar
  • 1/2 cup half and half
  • 4 tablespoons salted butter melted
  • 1 cup chopped strawberries
  • 1 cup white chocolate chips
  • coarse raw cane sugar optional
  • 1 cup powdered sugar
  • 12 tablespoons half and half

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, mix baking mix and granulated sugar.
  3. Stir in half and half and melted butter until just combined.
  4. Gently fold in chopped strawberries and white chocolate chips.
  5. Drop dough by tablespoons onto baking sheet, sprinkle with raw cane sugar if using.
  6. Bake for 12–15 minutes or until golden.
  7. Mix powdered sugar and half and half to create glaze and drizzle over cooled cookies.

Notes

  • Do not overmix dough to keep cookies tender
