2 boneless chicken thigh or 3 small cut into bite size pieces
1 tsp curry powder
½ tsp garlic powder
½ tsp paprika
¼ tsp turmeric
Salt & pepper
1 tbsp oil
½ small onion chopped
3–4 cloves garlic minced
2 tbsp red curry paste
1 cup coconut milk
1 pack udon fresh or frozen
veggies of choice Optional

Cilantro
red chili flakes
Instructions
Coat the chicken pieces with curry powder, garlic powder, paprika, turmeric, salt, pepper, and a bit of oil.
Cook the chicken in a pan over medium heat for 5 to 6 minutes until golden and fully cooked, then remove it from the pan.
Using the same pan, sauté the onion and garlic for 2 to 3 minutes until they become fragrant.
Stir in the red curry paste to blend with the aromatics.
Pour the coconut milk into the pan and simmer gently.
Add the udon noodles and the cooked chicken back to the pan, simmer for 2 to 3 more minutes allowing the noodles to absorb the sauce.
Adjust seasonings as needed and garnish with cilantro, lime juice, and red chili flakes if desired.
