Enjoy a delicious tin-foil-packet nachos recipe perfect for an easy foil packet nachos grill oven experience. Great for mess free foil packet nachos party gatherings with a blend of bold flavors and gooey cheese.

Ingredients

  • 1 large bag of your favorite tortilla chips
  • 2 cups of shredded sharp cheddar cheese or mix it up with a blend of Monterey Jack and Colby
  • 1 (15-ounce) can of black beans rinsed and drained
  • 1 fresh ripe tomato diced
  • 1 small red onion finely chopped
  • 1 jalapeño thinly sliced remove the seeds if you like it less fiery
  • 1/2 cup of black olives sliced
  • 1/2 cup of sweet corn fresh frozen or canned will do
  • 1 cup cooked shredded chicken or ground beef optional
  • Chopped cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Warm your oven to 375 degrees Fahrenheit to prepare for baking.
  2. Lay down a thick layer of tortilla chips in a large tin foil tray to create your base.
  3. Scatter half of the shredded cheese evenly over the chips to help bind the toppings.
  4. Add all the black beans, diced tomato, chopped red onion, sliced jalapeño, black olives, and sweet corn atop the cheese layer. If using, sprinkle the cooked chicken or ground beef on top of the veggies.
  5. Cover everything with the remaining cheese like a soft blanket.
  6. Season with salt and pepper according to your preference.
  7. Bake the tray for 10 to 15 minutes until the cheese is bubbling and golden brown.
  8. Take the nachos out and let them rest briefly before adding fresh cilantro on top.

Notes

  • For crisp tops, broil 2–3 minutes at the end
