8 large flour tortillas 10-inch burrito size recommended
0.5 cup mayonnaise full-fat preferred
1 tbsp Dijon mustard
1 lb sliced deli turkey medium-thin sliced
8 slices cheddar cheese sharp cheddar recommended
1 cup fresh spinach leaves stems removed patted completely dry
0.5 cup shredded carrots pre-shredded works well
0.5 cup red bell pepper sliced into thin strips
Instructions
Lay out all eight flour tortillas flat on a clean surface at room temperature.
In a small bowl, mix mayonnaise and Dijon mustard until smooth and fully combined.
Evenly spread a thin layer of the mayo-Dijon spread on each tortilla, leaving a half inch border around the edges.
Arrange two to three slices of deli turkey over the lower two-thirds of each tortilla, slightly overlapping, then place one slice of cheddar cheese on top.
Distribute spinach leaves evenly over the cheese, followed by shredded carrots and red bell pepper strips.
Roll each tortilla tightly from the filled end, folding sides inward as you go.
Wrap each roll snugly in plastic wrap and refrigerate for at least 30 minutes to firm up.
Remove from fridge, unwrap and slice each roll diagonally in half using a serrated knife, then serve or pack for lunch.

Store wrapped roll-ups in the refrigerator for up to three days
