  • ½ cup grated Parmesan cheese
  • 12 tablespoons fresh parsley, chopped (for garnish)
  • Optional: 1 cup baby spinach or kale, ½ tsp red pepper flakes for a kick

Instructions

  1. Sauté aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until soft (about 4–5 mins). Add garlic and cook 1 minute more.
  2. Add broth and chicken: Pour in the chicken broth, add shredded chicken, Italian seasoning, salt, and pepper. Bring to a simmer.
  3. Cook the noodles: Stir in broken lasagna noodles. Simmer uncovered for 10–12 minutes, stirring occasionally, until pasta is tender.
  4. Add the creamy stuff: Reduce heat to low. Stir in heavy cream, mozzarella, and Parmesan. Let it melt into the soup — it should be creamy and slightly stretchy (😍).
