Instructions
- Sauté aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until soft (about 4–5 mins). Add garlic and cook 1 minute more.
- Add broth and chicken: Pour in the chicken broth, add shredded chicken, Italian seasoning, salt, and pepper. Bring to a simmer.
- Cook the noodles: Stir in broken lasagna noodles. Simmer uncovered for 10–12 minutes, stirring occasionally, until pasta is tender.
