Instructions

  1. Thoroughly wash the zucchinis and trim their ends, then grate them using a box grater or processor.

  3. After resting, squeeze the zucchini firmly by hand or with a clean towel to remove excess liquid and avoid soggy fritters.
  4. In a large bowl, whisk together egg, gluten-free flour, Parmesan cheese if used, minced garlic, black pepper, and paprika until smooth.
  5. Add the drained zucchini and chopped parsley to the bowl and mix well to form a thick batter.
