This Zucchini Pizza Casserole is a delicious low carb pizza bake that combines fresh zucchini with ground beef and gooey cheese for an easy weeknight dinner. It is a family friendly casserole and perfect one dish dinner recipe featuring a healthy zucchini recipe.

Ingredients

  • 4 cups zucchini shredded
  • 1 teaspoon salt
  • 2 large eggs
  • 0.5 cup Parmesan cheese grated
  • 2 cups mozzarella cheese shredded divided
  • 1 cup cheddar cheese shredded
  • 1 pound ground beef
  • 1 small onion chopped
  • 1 cup pizza sauce
  • 1 green bell pepper chopped
  • 1 cup mushrooms sliced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F 200°C.
  2. In a large bowl, combine the shredded zucchini and salt and let sit for 10 minutes.
  3. Squeeze out as much moisture as possible from the zucchini using a clean kitchen towel or cheesecloth.
  4. Combine the drained zucchini, eggs, Parmesan cheese, and half of the mozzarella cheese and mix well to form the crust mixture.
  5. Grease a 9×13-inch baking dish and press the zucchini mixture evenly into the bottom to form the crust.
  6. Bake the crust for 20 minutes or until set and lightly browned.
  7. While baking, brown the ground beef with chopped onion in a skillet until no longer pink and drain excess fat.
  8. Stir in pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper and cook 5 minutes.
  9. Spread the beef mixture evenly over the baked zucchini crust.
  10. Sprinkle remaining mozzarella cheese and all cheddar cheese on top.
  11. Return casserole to oven and bake 20 minutes until cheese is melted and bubbly.
  12. Remove from oven and cool 10 minutes before serving.

Notes

  • Zucchini can release a lot of water so ensure it’s well-drained to avoid a soggy crust
  • Feel free to customize with your favorite pizza toppings like olives or pepperoni
  • This dish is perfect for meal prep and freezes beautifully for up to 2 months
