1 ½ lb.Chicken breasts
1 tbsp.Apple cider vinegar
1 cupPineapple chunks
3Chipotle Peppers in Adobo sauce
3 cloveGarlic
1 tbsp.Honey or Brown Sugar
1 tsp.ground Cumin
1 tsp.ground Cilantro
1 tsp.oregano
1 tbsp.Olive oil
Salt to taste
Instructions
Blend chipotle peppers in adobo sauce, apple cider vinegar, honey or brown sugar, garlic, oregano, ground cumin, ground cilantro, salt, and olive oil until thick.
Coat the chicken breasts with the marinade and let them sit for at least 2 hours or overnight.
Preheat the air fryer to 360F or 180C for 5 minutes.
Lightly oil the air fryer basket and arrange the marinated chicken breasts in a single layer.
Toss pineapple chunks in leftover marinade then add them to the basket.
Cook in the air fryer at 360F or 180C for 12-15 minutes until chicken is fully cooked and browned.
Let the chicken rest a few minutes before slicing.
Serve with the roasted pineapple chunks, cilantro, and lime wedges.
