Ingredients

  • 4 chicken thighs with the bone skin removed
  • kosher salt and fresh pepper to taste
  • olive oil spray
  • 1/2 can 14 oz crushed tomatoes Tuttorosso my favorite!
  • 1/2 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 2 tablespoons chopped basil or parsley for topping

Instructions

  1. Season both sides of the chicken thighs with salt and pepper.
  2. Use the air fryer to brown the chicken lightly on each side by spraying the basket with olive oil spray first.
  3. Remove the chicken and add the diced onions and bell peppers to the basket, sauté until they soften and develop some golden color, about 5 minutes.
  4. Return the chicken to the basket and pour the crushed tomatoes over it, then sprinkle oregano, add the bay leaf, and season with salt and pepper.
  5. Cook the chicken and sauce in the air fryer under pressure for 25 minutes, then allow a natural release period.
  6. Discard the bay leaf, sprinkle the chopped basil or parsley for garnish, and serve over your favorite pasta, rice, or polenta.
