  • 2 large boneless skinless chicken breasts approximately 1 pound
  • 1 roma tomato sliced I used 4 slices
  • 1/4 pound fresh mozzarella sliced approximately 1/4 inch thick I used 4 slices
  • 6 fresh basil leaves more or less
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar optional
  • pinch of salt & pepper

Instructions

  1. Cut a wide pocket into the thick side of each chicken breast without slicing all the way through and open it like a butterfly.
  2. Drizzle olive oil over the chicken and season with salt and pepper.
  3. Layer mozzarella slices, tomato slices, and fresh basil on one half of each chicken breast.
  4. Fold the other half of the chicken over the fillings and secure with 2-4 toothpicks.
  5. Sprinkle dried basil, salt, and pepper on top and lightly spray with cooking spray.
  6. Preheat your air fryer to 350 degrees F.
  7. Place the stuffed chicken breasts in the air fryer basket lined with a liner or foil.
  8. Cook at 350 degrees F for 25 to 30 minutes until the chicken’s internal temperature reaches 165 degrees F.
  9. Optionally, drizzle balsamic vinegar over the cooked chicken before serving.
