4 chicken thighs bone-in skin on
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon granulated garlic
½ teaspoon onion powder
¼ teaspoon sea salt
¼ teaspoon Cayenne pepper
¼ teaspoon parsley
¼ teaspoon ground coriander
¼ teaspoon oregano
1 jalapeño finely chopped seeds optional
1 shallot finely chopped
3 garlic cloves finely chopped
½ cup red wine vinegar
1 teaspoon kosher salt
½ cup cilantro finely chopped
¼ cup flat-leaf parsley finely chopped
¾ cup extra-virgin olive oil
Instructions
Combine all dry rub ingredients well in a small bowl.
Generously coat both sides of the chicken thighs with the dry rub.
In a medium bowl, mix jalapeño, shallot, garlic, red wine vinegar, and kosher salt and let it rest for 10 minutes.
Stir in cilantro, parsley, and olive oil to finish the chimichurri sauce.
Preheat the air fryer to 400°F for about 3 minutes according to your machine’s directions.
Arrange chicken thighs in the air fryer basket, bone side down, without overlapping.
Cook for 22 to 24 minutes, flipping halfway through, until skin is crisp and internal temperature reaches 170-175°F.
Serve chicken topped with chimichurri or alongside it, paired with your favorite salad or side dish.
