Air Fryer Chicken Gyros Tzatziki combines crispy air fryer chicken with creamy homemade tzatziki sauce for an easy dinner that fits perfectly into weeknight meals. Enjoy a family dinner that feels special and full of Greek flavors.

  • 2 lb / 1 kg chicken thigh fillets boneless skinless
  • 3 large garlic cloves minced (~ 3 tsp)
  • 1 tbsp white wine vinegar (or red wine or apple cider vinegar)
  • 3 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 3 tbsp Greek yogurt preferably full fat
  • 1 1/2 tbsp dried oregano
  • 1 tsp salt
  • Black pepper
  • 2 cucumbers (to make about 1/23/4 cup grated cucumber after squeezing out juice)
  • 1 1/4 cups Greek yoghurt preferably full fat
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil (or more if you want richer)
  • 1 garlic clove minced
  • 1/4 tsp salt
  • Black pepper
  • 3 tomatoes desseeded and diced
  • 3 cucumbers diced
  • 1/2 red spanish onion peeled and finely chopped
  • 1/4 cup fresh parsley leaves (optional)
  • Salt and pepper
  • 4 to 6 pita breads or flat breads

Instructions

  1. Combine all marinade ingredients in a ziplock bag and massage to blend them well. Add the chicken pieces and rub the marinade over them thoroughly. Leave to marinate for a minimum of 2 hours, ideally up to 12 hours but no longer than 24 hours.
  2. To prepare the tzatziki, halve the cucumbers lengthwise and scoop out the watery seeds. Grate the cucumbers coarsely then squeeze out their juice using paper towels or a tea towel.
  3. Place the strained cucumber in a bowl and mix with Greek yoghurt, lemon juice, olive oil, minced garlic, salt, and black pepper. Let the flavors meld for at least 20 minutes.
  4. Mix the tomatoes, diced cucumbers, red onion, parsley, salt, and pepper together to make the salad.
  5. Heat your grill or frying pan with oil over medium high heat. Remove chicken from the marinade and cook each piece for 2 to 3 minutes per side until golden brown and cooked through.
  6. Once cooked, let the chicken rest covered loosely with foil for 5 minutes.
  7. To assemble the gyros, place salad on warmed pita or flatbread, add sliced chicken, then dollop with tzatziki. Roll tightly using parchment or foil and secure by twisting the ends. Serve and let everyone enjoy assembling their own if preferred.

Notes

  • Tzatziki makes plenty of sauce and can be stored or substituted with a garlicky Lemon Yogurt Sauce for a quicker alternative
  • Chicken can be frozen in marinade uncooked and cooked after thawing
  • Cooked chicken keeps in the fridge for up to 4 days
