Instructions
Cut the chicken breasts into cutlets if needed and flatten them to about 1/2 inch thickness. Sprinkle both sides with salt and pepper and let rest for 15 minutes to dry brine.
In a large bowl, whisk eggs, flour, water, salt, pepper, and garlic powder together to form a batter thinner than pancake batter.
Spread the panko breadcrumbs out on a separate plate.
Dip each piece of chicken into the batter, letting any excess drip off, then press firmly into the panko crumbs to coat evenly without any dry spots.
Place the coated chicken in the air fryer basket and spray lightly with neutral oil. Cook at 350F for 10 minutes until golden.
Spray the chicken again, flip it, spray the other side, and cook for another 4 to 6 minutes until crust is golden and internal temperature reaches 165F.
Serve the crispy chicken with rice, katsu sauce, and pickled ginger. Enjoy!
Notes
Pound chicken to 1/2 inch thickness to ensure even cooking and crispy coating
Use panko breadcrumbs as they create a lighter crunch
Spray with neutral oil to help the crust crisp up
Leftovers keep for 3 4 days in the fridge but may lose crispiness
Reheat in the air fryer at 350F for 3 5 minutes to restore crispiness
