Ingredients

Scale
  • 4 chicken breasts
  • 80 g butter softened
  • 4 cloves garlic crushed
  • 1 tsp dried parsley or 1 tbsp fresh parsley chopped
  • 80 g plain flour
  • 2 large eggs beaten
  • 80 g breadcrumbs preferably panko for extra crunch

Instructions

  1. Combine softened butter, crushed garlic, and parsley in a small bowl until well mixed.
  2. Shape the garlic butter mixture into a small log using cling film and chill for at least 30 minutes.
  3. Butterfly chicken breasts and flatten evenly with a rolling pin between cling film or baking paper.
  4. Divide chilled garlic butter into four and place on chicken pieces, then roll tightly sealing edges with flour and egg if needed.
  5. Set up breading station with flour, beaten eggs, and breadcrumbs. Dip each chicken roll first in flour, then in eggs, and finally coat with breadcrumbs, pressing gently.
  6. Place breaded chicken in air fryer basket lined with foil or cooking tray. Optional: spray tops lightly with olive oil spray.
  7. Air fry at 180°C for 18 to 20 minutes until cooked through and internal temperature reaches 75°C.
  8. Let chicken rest a few minutes before serving with preferred sides.
