Air Fryer Chicken Kofta turns simple ground chicken into juicy and flavorful skewers perfect for an easy dinner. This weeknight dinner recipe brings family dinner to life with spiced chicken skewers full of Mediterranean flair and quick prep.

  • 1 onion medium-size peeled (about ½ cup)
  • 1 lb ground chicken
  • ½ cup panko breadcrumbs
  • 2 cloves garlic minced
  • ¼ teaspoon baking soda
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1 egg
  • 1 ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • ¼ cup fresh Italian parsley chopped
  • 1 tablespoon olive oil to use when shaping the kofta or water

Instructions

  1. Grate the onion using a box grater and place it in a fine mesh strainer set over a bowl to remove excess juices by pressing with a spoon; discard the liquid and transfer the drained onion into a large bowl.
  2. Add ground chicken, panko breadcrumbs, minced garlic, baking soda, cumin, paprika, egg, kosher salt, black pepper, red pepper flakes, and chopped parsley to the bowl and combine everything thoroughly with your hands.
  3. Pour olive oil into a small bowl, lightly oil your hands, and shape the mixture into 10 oval patties about 2 tablespoons each, then place them on a platter and cover with plastic wrap to rest at room temperature for 10 to 15 minutes.
  4. Preheat the air fryer to 375°F (191°C) and lightly brush or spray oil inside the basket.
  5. Arrange koftas in a single layer with space between them and air fry for 12 to 13 minutes, flipping them halfway through, until a thermometer inserted into the center reads 165°F (74°C).
