  • 2 large chicken breasts
  • ⅓ cup plain flour or all purpose flour
  • ¼ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cracked black pepper
  • ¼ teaspoon salt
  • 2 eggs beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Heat the air fryer to 200°C or 400°F.
  2. Slice each chicken breast horizontally to create four thin fillets.
  3. Pound the fillets gently to get even thickness using a meat mallet or wrapped saucepan.
  4. Arrange three shallow bowls: mix flour with paprika, garlic powder, salt, and pepper in the first; whisk eggs in the second; combine panko with parsley, garlic powder, salt, and pepper in the third.
  5. Coat each fillet in the flour mix, then dip in eggs, followed by the breadcrumb mixture covering all sides.
  6. Lightly oil the air fryer basket, place the crumbed fillets inside, spray a bit more oil on top, and cook for 12 to 15 minutes, flipping once around three quarters through to ensure an even golden crisp.
  7. Repeat if necessary depending on basket size and serve schnitzels straight away.

Notes

  • If you have leftovers, keep them sealed in the fridge for up to 3 days
  • Reheat in the air fryer until hot and crispy
