This Air Fryer Chicken Tzatziki Bowl makes a great easy dinner with crispy air fryer chicken and homemade tzatziki sauce. It’s a perfect weeknight dinner that families will enjoy with fresh toppings and quick prep.

1 ½ pounds boneless skinless chicken breasts
1 medium zucchini
1 medium bell pepper any color
¼ cup Greek vinaigrette
1 tablespoon Greek seasoning
1 teaspoon cracked pepper
2 cups cooked white rice
1 cup cherry tomatoes halved
2 mini cucumbers chopped
½ red onion halved and sliced into thin strips
½ cup kalamata olives
½ cup crumbled feta cheese
½ cup tzatziki more if desired
Instructions
Cut the chicken into small pieces and put them in a bowl.
Slice the zucchini into rounds and dice the bell pepper, then add both to the bowl with the chicken.
Pour Greek vinaigrette, Greek seasoning, and cracked pepper over the mixture and mix everything well.
Lightly spray the air fryer basket with nonstick spray, place the chicken and vegetables inside, and cook at 400 degrees for 10 to 12 minutes until the chicken is fully cooked, shaking the basket halfway through.
Evenly divide the cooked rice among four bowls and top each with the cooked chicken and vegetable mix.
Add the tomatoes, cucumbers, red onion, kalamata olives, and crumbled feta on top, then drizzle with tzatziki sauce to finish.
Notes
We use Cavender’s Greek Seasoning, which is salty enough not to need extra salt
Adjust salt to taste if using a different Greek seasoning
You can omit cucumbers and olives for picky eaters
Serve with warm pita bread and fresh lemon juice if desired
For a low-carb option, replace cooked white rice with cooked cauliflower rice
