  • 4 lb Whole chicken
  • 6 tbsp Unsalted Butter softened
  • 3 cloves Garlic crushed
  • 1 tbsp Fresh parsley
  • 1 tbsp Fresh dill
  • 1/4 tsp Sea salt
  • 2 tbsp Olive oil
  • 1/2 tsp Sea salt
  • 1 tsp Paprika
  • 1/2 tsp Black pepper

Instructions

  1. Use paper towels to thoroughly dry the chicken.
  2. In a small bowl, combine softened butter, crushed garlic, parsley, dill, and sea salt, mashing with a fork.
  3. Gently separate the skin on the breast and legs from the meat and spread the garlic herb butter underneath the skin, pressing to distribute it evenly, including inside the cavity.
  4. Coat the chicken skin on both sides with olive oil and season it with sea salt, paprika, and black pepper.
  5. Place the chicken breast side down in the air fryer basket and cook at 350 degrees F (176 degrees C) for 30 minutes.
  6. Flip the chicken over, optionally tie the legs, and continue air frying for another 25 to 35 minutes until the thickest breast part reaches 160 degrees F (71 degrees C).
  7. Remove the chicken and let it rest for 10 to 15 minutes before carving.

Notes

  • Serving size: 1/4 of the entire chicken
  • For best results, soften butter and prepare compound butter a few days ahead
  • Season the skin just before cooking for crispy skin
  • Store leftovers up to 3-4 days refrigerated or freeze up to 3 months
  • Reheat individual pieces in the air fryer to prevent drying out
