  • 1 lb boneless skinless chicken breast fat trimmed
  • 1 cup panko bread crumbs
  • ¼ cup grated parmesan cheese
  • ⅛ tsp kosher salt
  • ⅛ tsp ground black pepper
  • 1 large egg whisked
  • cooking spray

Instructions

  1. Whisk the egg in a shallow bowl and set aside.
  2. Mix the panko, parmesan cheese, salt, and pepper in another shallow bowl.
  3. Slice chicken breasts to about ½ inch thick and trim off all fat.
  4. Place chicken under plastic wrap and lightly pound with a meat mallet to even thickness.
  5. Dip each chicken piece first in the egg, then coat with the panko mixture, placing them on parchment paper or a plate.
  6. Spray the air fryer basket with cooking spray and arrange the chicken in a single layer.
  7. Spray the tops of the chicken with cooking spray.
  8. Air fry at 400° for 20 minutes, flipping halfway and spraying the tops again.
  9. Continue cooking until chicken is fully cooked and golden.
