2 cups buttermilk
4 boneless chicken thighs skin on
4 chicken legs bone-in skin on
1 1/4 cups all-purpose flour
1/2 cup potato starch
2 1/2 tsp smoked paprika
1 1/2 tsp garlic powder
1 tsp chili powder
1 tsp onion powder
1 tsp oregano dried
1 tsp thyme dried
1 1/4 tsp white pepper
1 1/2 tsp mustard powder
2 tsp kosher salt
2 tsp nutritional yeast optional
avocado oil spray
flaky salt for topping
Instructions
Pour the buttermilk into a large bowl and submerge the chicken pieces, then cover with plastic wrap and refrigerate overnight.
Mix the flour, potato starch, smoked paprika, garlic powder, chili powder, onion powder, oregano, thyme, white pepper, mustard powder, kosher salt, and nutritional yeast in a large baking dish.
Take the chicken out of the fridge and add about 1/4 cup of buttermilk to the flour mixture, stirring to create a crumbly coating for the chicken.
Preheat the air fryer and first coat the bone-in chicken legs with the flour mixture, tapping off the excess.
Set the air fryer to 370ºF and arrange the legs in the basket, spray them with avocado oil, then cook for 22 to 24 minutes without flipping, spraying oil midway if needed.
Immediately season the cooked legs with flaky salt and place them on a wire rack over parchment paper to keep warm in a low oven while preparing the thighs.
Coat the boneless chicken thighs with the same method and air fry at 350ºF for 15 minutes, spraying oil halfway through without flipping.
Increase the temperature to 360ºF and continue cooking the thighs for an additional 4 to 5 minutes until crispy and browned, then sprinkle with flaky salt.
Serve all the chicken pieces together and enjoy your crispy air fryer KFC style fried chicken.
