Enjoy this Air Fryer Peruvian Chicken, perfect for an easy dinner or weeknight dinner. The Peruvian chicken marinade delivers bold flavor and crispy air fryer chicken skin, making it a great family dinner choice.

Ingredients

  • 45 lb chicken giblets removed
  • 3 Tablespoon extra virgin olive oil
  • 2 Tablespoon lime juice
  • 6 garlic cloves
  • ½ Tablespoon kosher salt
  • 2 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 Tablespoon cumin
  • 1 teaspoon oregano dried
  • 2 teaspoon brown sugar
  • 2 Tablespoon soy sauce

Instructions

  1. Combine all marinade ingredients in a food processor and blend until the mixture is smooth.
  2. Coat the whole chicken thoroughly with the marinade, making sure to spread it under the skin and inside the cavity. Marinate it for at least 6 hours or up to 24 hours for best flavor.
  3. Place the chicken breast side down in the Air Fryer basket and cook at 360 degrees Fahrenheit for 30 minutes.
  4. Flip the chicken over and cook at 360 degrees Fahrenheit for an additional 20 minutes.
  5. Check the chicken’s internal temperature with a quick read thermometer; it should read 165 degrees Fahrenheit in the thickest part.
  6. Let the chicken rest for 15 to 20 minutes before slicing and serving.

Notes

  • You will need a larger size Air Fryer to make this whole chicken
  • You could also use this marinade on chicken pieces if you cannot fit a whole chicken in your Air Fryer
  • Just make sure the pieces are in a single layer so they can get crisp
  • You can sub your favorite seasoning for this whole chicken
  • Cook times will remain the same
