  • 4 boneless skinless chicken breasts or cutlets
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 egg
  • 1 tablespoon Dijon mustard
  • 1 cup finely chopped pecans
  • ½ cup panko breadcrumbs
  • Oil spray

Instructions

  1. Dry the chicken and season both sides with salt pepper and garlic powder.
  2. In a bowl whisk together the egg and Dijon mustard.
  3. Combine chopped pecans and panko breadcrumbs in a separate bowl.
  4. Coat the chicken fully in the egg mixture then press it firmly into the pecan mixture covering all sides.
  5. Preheat the air fryer to 375°F 190°C and spray the basket lightly with oil.
  6. Place chicken in a single layer in the basket and spray the tops with oil.
  7. Cook in the air fryer for 12 to 14 minutes flipping halfway through until the chicken is golden and reaches an internal temperature of 165°F 74°C.
  8. Allow the chicken to rest for 5 minutes before slicing and serving.
